End-grain wood cutting board
Wood fibers stand upright so knife edges cut between them rather than across, keeping blades sharper longer. The fibers close back up after cuts, so the surface stays smooth instead of developing permanent scars like plastic.
What to look for
- 1End-grain construction (checkerboard pattern of wood squares, not stripes)
- 2At least 12×16 inches and 1.5 inches thick for stability
- 3Hardwoods like walnut, maple, or cherry—softer woods dent easily
- 4Juice groove around edges to catch liquid
Skip
- Edge-grain boards marketed as end-grain (stripes instead of checkerboard)
- Boards under 1.5 inches thick that slide or rock while cutting
Used for: practicing knife cuts without dulling blades · chopping vegetables with stable surface grip · protecting knife edges during repetitive slicing · catching juice from cutting meat or tomatoes
